Correlation of Green Cardamom with Food

        Cardamom is well known as a spice used in our cooking, and is one of the primary constituents  of  Garam Masala. It is Referred as the ‘Queen of Spices’. Cardamom is considered one of the most valuable spices in the world due to its rich aroma and therapeutic properties. 

        Cardamoms are used as flavorings and cooking spices in both food and drink, and as a Medicine. Cardamom seeds whole or in powdered form are often employed in the Preparation of curry powder, pickles, sausages, cakes and confectionery. Cardamom have the potential to be used as Preservatives in many foods namely in processed meat to replace chemical preservatives.

       Whole green cardamom pods are added to pulao, curries and hot dishes. Since the shell integrates while cooking, it infuses the dish with its essence as well as refreshing aroma. Thus, it is usually utilized to provide aroma to biryanis, pulao and kababs.Cardamom also used in desserts just like kheer and firni in addition to impart its distinctive flavor. 

        Cardamom exhibits antifungal, anti-inflammatory, anti-Microbial properties (Daswani et al, 2003) . Cardamom has antioxidant properties and can increase levels Of glutathione, a natural antioxidant in the body. Cardamom incorporated yoghurt had the highest anti-oxidant Activity as measured by DPPH assay (Vijay lakhshmi et al.2014) .Cardamom has been Used traditionally for a variety of conditions as a digestive, appetites stimulant, stomach problems ,breathe freshener etc..
