OCCURRENCE OF CARDAMOM

Cardamom (Elettaria cardamomum ) is a spice that comes from the seeds of a various plants in the ginger family Zingiberaceae. Cardamom fruits may be collected from wild plants, native to moist forest of Southern India and is also grown in Guatemala which is the largest producer and exporter of this spice in the world.

CHEMICAL COMPOSITION OF CARDAMOM:

Proximate Composition: 

The analyzed composition of cardamom variety which found in Ethiopia is between in the ranges of different countries cardamom variety.  As shown in table 1.

Mineral Composition:  

Cardamom is rich in its micro and macro mineral contents which was calculated as Calcium at the amount of 109.87, potassium 84 3.28 , magnesium 102.76, phosphorus 151.29, sulphur  37.14, manganese 29.32, iron 11.16, and zinc 1.573 mg/100 mg as shown in table 2.
